Recipe for fast, delicious, healthy lasagna

I've now made this meatless lasagna twice (including yesterday while watching the Super Bowl). It's delicious, stupidly simple and relatively healthy. Last night, I made two pans so we would have plenty of leftovers.

I made it the first time at Christmas when my mother visited. She's vegetarian, as is this.

I found the recipe on Epicurious.com. Using the no-cook lasagna noodles saves a good little bit of prep time. I would say the entire thing took me 20 minutes to make prior to sliding into the oven. The hardest part was thawing the chopped spinach. Seriously.

This is a hearty dish, so my wine pairings would include:

-- A Chianti Classico or similar Sangiovese-based red wine.
-- A Zinfandel.
-- A big Washington Merlot.
-- A thick Syrah.
